Good morning everyone,

On this Monday morning the sky is clear blue. We have 19° and the ground is covered with snow. It is beautiful! This snow came on Saturday afternoon & evening. It started at noon, very fine, and slowly increased in density. The ground was soon covered in white. We got approximately 4 inches. There is still some hanging on the branches of the evergreen trees and bushes!

In looking out over the valley the air looks hazy and frosty. There is a cloud bank in the northwest and a slight breeze coming from that direction. It looks like the clouds will soon hide the sun, but I am thankful that we can trust that it is still there.☺

Rabbit tracks cris-cross the yard – a sign that they were out last night searching for food. I often see a beautiful red-tailed hawk sitting in the trees in the backyard watching for any unassuming mouse to venture on top of the snow.

This is winter and time to do our inside projects that got pushed back during the summer.

Chia Pudding
1 1/2 cup coconut milk 1 tsp vanilla extract
3/4 cup plain Greek yogurt 1/8 tsp. Himalayan salt
1 Tbsp honey (or to desired sweetness) 1/3 cup chia seeds

Blend all ingredients except chia seeds in a bowl with a mixer, then add chia seeds, mix on low or use a whisk until mixed well. Refrigerate 1/2 hr then whisk again to keep seeds from clumping together. Let set overnight. This is similar in consistency to tapioca pudding.

Or you can blend everything in a blender/Vita-Mix until smooth. This makes a smoother pudding than the first way.

For garnish, use shaved chocolate & toasted sliced almonds – or use your imagination, such as fresh berries or other fruits & nuts.
