Good evening everyone,
This was a beautiful winter day. Some snow fell during the night making everything look fresh and clean this morning. In the PM we got more snow, and the temperature is at 18°.
I’m so grateful for a cozy, warm house to be in and feel sorry for the folks that don’t have that privilege. Every comforter that people make and donate makes a difference in the life of someone.
Farmers are hauling manure these days. With the ground being frozen it makes it easier to get it out on the fields. Manure spread on a snowy field is a good attraction for wintering birds that are searching for food. This winter I have seen more robins than I ever have during the winter months.
Now is the time to browse through seed catalogs, decide what we want to plant in the garden and place the order for the seeds.
There are a few events in Mt. Hope again:
- Feb 27th– March 1st is the Amish Country Spring & Garden Show
• March 3rd-March 8th is the spring Mid-Ohio Draft Horse sale which brings a lot of people into the area.
• March 15th is Whitetails of Holmes County.
I found a recipe in the cookbook “Just You and Me” and altered it to my liking. I wanted to use sweet potatoes instead of regular potatoes.
Potato Casserole
- 2 eggs beaten
• 2 cups sweet potatoes cubed
• ¼ cup milk
• 1/3 cup chopped onions
• 1 clove garlic minced
• ¼ cup cracker crumbs
• 1 tsp ashery’s own hamburger seasoning
• ¼ tsp black pepper
• ½ cup shredded cheddar cheese
• 4 strips bacon, cooked and crumbled
In a bowl, beat eggs. Stir in potatoes, milk, onions, cracker crumbs, seasonings and garlic. Put in a quart baking dish. Bake at 350° for 30 minutes. Top with cheese and bacon. Return to the oven until cheese is melted.
