  • Light red kidney beans are a medium-sized bean that gets their name from their distinctive shape. Kidney beans work great in soups and stews and are heavily used in Mexican meals. Mix them with other cooked beans and toss in a light vinaigrette for a quick and easy nutritious salad.
  • Shelf life 1 year – indefinitely. It is best to use them within a year, after 1 year they may take longer to cook, after 2 – 3 years they lose some of their vitamins.
  • 1 pound = 2 ½ cups dried = 7 cups cooked.
