This rice is very dark brown to black in color and is often served with wild game such as venison or pheasant. Try using wild rice in soups or pilafs and makes a delicious side dish when cooked with cranberries. It is one of the most nutritious grain-like foods. It is very low in fat and very high in fiber. It has nearly twice the protein of true rice varieties and it is loaded with B vitamins.
