  • A phosphorus compound contained in the cell material of animal and vegetables, such as the yolk of an egg.
  • To mix Lecithin Granules use one tablespoon of granules per every cup of flour to improve moisture and texture in a variety of baked goods including breads and cookies.
  • Gives bread a longer shelf life and better crust consistency. Also makes it lighter.
  • Granules are used the same as powder. If a recipe calls for liquid lecithin, use 1/3 less of granules or powder. Nutritionally, there is no difference between liquid and powder.
