- Coconut Ginger Rice provides a creamy, mildly flavored base for Asian-inspired meals. Add pineapple juice or sugar to achieve a sweeter rice, or add ground or fresh minced ginger for a more robust spiciness.
- Recipe: 2 cups water, 1 cup rice blend. In a saucepan, bring water to a boil. Add rice blend. Return to a boil, stir, cover and reduce heat to low. Simmer for 15 minutes. Stir, remove from heat, keep covered and allow to steam for 5 minutes. Fluff with a fork and serve. Makes about 4 servings.
