We are enjoying a beautiful, sunny day. It is warm with the air a little on the cool side, which makes it perfect. We have had a lot of rain in the last few weeks leaving the gardens too wet to get into. I noticed a few tiny pea plants pushing through.

 

In the short distance to work this morning I saw two different farmers plowing. A week or so ago I saw some planting being done.

 

Springtime outdoors is so beautiful with daffodils blooming and tulips starting to show their brilliant colors. Flowering trees are beginning to show color. Birds are migrating and singing. I had the opportunity to see the nesting Osprey and Bald Eagle at Nimisila Reservoir, plus a flock of approximately 40 Red Breasted Mergansers.

Asparagus will soon be growing. I found this recipe in Creative Cooking cookbook that I would like to make.

Asparagus Casserole

4 cups cooked asparagus

4 hardboiled eggs

¾ cup crushed ritz crackers

6 tablespoons butter browned

 

Sauce:

2 tablespoons butter

2 tablespoons flour

2 cups milk

¼ teaspoon salt

½ teaspoon black pepper

5 slices cheese

 

Directions:

  1. Place cooked asparagus in casserole and add eggs.
  2. Sauce: Melt butter. Add milk, flour, salt, and pepper. Stir until thickened. Add cheese.
  3. Pour sauce on top of asparagus.
  4. Mix cracker crumbs with brown butter and put on top. Bake at 325° for 40 minutes.
