Another day has ended, and it is now dark at 7:00 PM. What have we done today that has eternal value?

What was the weather like today? It was cloudy and cool, a typical Ohio December day.

I imagine you folks are all getting ready for Christmas. Perhaps for some it will be a rather lonely day if we can’t gather with families like usual. May we all have Christmas in our hearts and still have a good day.

The time of year is here when farmers haul manure, grind feed, do chores, keep animals happy, cut firewood and keep the homefires burning.

Ladies have sewing projects, cleaning, laundry, cooking, baking and keeping food on the table.

Youth plan to do Christmas caroling. School teachers and pupils are practicing their program for Christmas. Excitement is high!

Winter is also the time to do butchering for our meat supply. A day is set aside this month to cut up a beef and possibly a pig. It will be a full day but with many hands helping will make it enjoyable and satisfying.

At one of the Christmas dinners I attended this jellied salad was served. It is light and refreshing.

Cranberry Jell-O Salad

1-12oz bag cranberries, chopped

3 cups shredded apples

3 cups grapes, sliced in rings

½ cup raw honey

1-12oz frozen white grape juice concentrate

1-20oz can crushed pineapple, drained

3 tablespoons plain gelatin

Soak gelatin in 1 cup cold water. Add 1 cup boiling water. Stir until dissolved. Put drained pineapple juice, white grape juice concentrate and water into measuring pitcher to make 5 cups liquid. Add honey and stir until smooth. Chill in bowl until partly set, approximately 1 hour. Mix with prepared fruit and pour into a lightly oiled jello mold. Fills 2- 6½ cup molds. Chill overnight. To serve, unmold onto a glass platter and spoon cottage cheese into the hole in the middle of the jello mold.
