Blessed Easter Everyone,

This has been an interesting day weather wise. During the night we had thunder, lightning, rain, and it sounded like hail hitting the windowpanes. Then early this morning the moon was shining. It was still visible when the sun came up. But soon the sun was hidden by the clouds and we had a dreary looking forenoon until somehow the clouds disappeared and we were blessed with a beautiful, sunny, warm noon afternoon and evening.

Our gardens are plowed & tilled, onions planted, and lettuce & radish seed put in. The farmers still have plowing to do, but quite a lot has been done. I noticed one neighbor was having drainage piping put into his field.

The grass is green again, like it always gets in the spring. It is another reminder that God is faithful. The time has come again to let the cows out to graze. It always creates a lovely, peaceful scene; the black and white cattle in the lush green grass. Occasionally we get to see the yellow flash of a Meadowlark flying by.

We enjoyed a few good meals of dandelion gravy, which is always a good springtime treat. It can’t help but be good if we put bacon and hard-boiled eggs in it.

I guess I won’t mention any events this time, there just isn’t much going on. We are all trying to stay well and safe.

Now it is August 13th in the evening. We had rain this morning and then it became very windy. The temperature has dropped from 60° to 44°. The spring flowers are so cheery. Daffodils are blooming. Crocus are past and the tulips buds are getting fatter. It won’t be long before they show their color, unless we get cold weather again and it seems very much like we just might.

If you are looking for a “different” salad you may want to try this. This is a recipe by Edna Miller that I found in Healthy Choice Cookbook.

Pea Salad
1 cup cooked peas
½ cup diced cheese
½ cup sweet pickles, chopped
1 cup celery, cut fine

Mix all with mayonnaise, season with salt and pepper
