What a change! Last week we had beautiful summer-like weather. Clear, sunny, and warm. Now today at approximately 6 PM we had a snowstorm/squall. It is very windy, and the temperature has dropped to 36°. Nonetheless, spring is here!

The lawns are very rich green, and the grass has been cut already. Gardens have been tilled and some early vegetables have been planted. Onions, potatoes, peas, and lettuce. I also put in carrots, red beets, kale, and radishes. Working in the garden is very invigorating and satisfying.

Farmers have been plowing and sowing seed. The spring daffodils are beautiful, and tulips are just beginning to come out also.

A free presentation on purple martins will be held on April 26th at the Apple Creek Historical Society with Don Plant at 7 PM.

Restoring Lives Ministries will host its annual fundraiser on April 21st at Maranatha Church from 4-8 PM. A benefit for Haitian people.

I just got done cooking lemon pie filling for part of our dessert for lunch tomorrow.

Here is the recipe:

3 tbsp cornstarch

1 cup sugar

1/4-1/3 cup fresh lemon juice

3 egg yolks

1 ½ cup boiling water

3 egg whites

6 tbsp sugar

Put cornstarch, sugar, and lemon juice into a big skillet. Beat egg yolks and add to the mixture. Add boiling water. Boil 4 minutes or until thickened. Put into baked pie shell. Beat egg whites and add 6 tbsp sugar. Put on top and brown in the oven. (I added ½ tsp cream of tartar and ½ tsp vanilla to the egg whites and used powdered sugar to help prevent weeping.)
