December is here and Christmas time as well. This is a busy time of year, but also a joyous time. Especially when we remember that God has given to us the greatest gift ever; His son Jesus.

We have had 2 days of beautiful clear blue sky and sunshine, yesterday and today. I thought the sunset was so pretty tonight. The soft orange and aqua colored sky with strips of cloud cutting across. It was awesome!

There is lots of activity around Christmas. The youth had their Christmas program on Sunday evening, where they enjoy fellowship with other youth in the area. They also have an evening when they go caroling/singing for the elderly, etc. An activity that is enjoyed by the givers as well as the receivers.

The schoolteachers are busy drilling the students with their singing and memorizing of poems in preparation of their Christmas program. Sometimes they act out a play. On the day of the program, which is often a few days before Christmas, the parents and friends can go and watch the children perform. Afterwards there are gifts for the children and teachers and lots of goodies to snack on.

I enjoy trying new recipes and this one uses the new Whole Cell Crushed grains: Moist Cornbread

• 1 cup Crushed Wheat #1
• 1 cup Crushed Corn #2
• 1 tblsp Baking Powder
• 1 tsp Pink Salt
• 2 Eggs
• ¾ cup Half & Half
• ¼ cup Plain Yogurt
• ¼ cup Olive Oil
• ¼ cup Honey

Mix dry ingredients. Beat eggs, add half & half, oil and honey. Combine and stir only until moistened. Pour into cupcake papers in a muffin tin or an 8-inch square baking dish. Bake at 400° for 15-20 minutes or until done. This is not a sweet cornbread. It is good served with Chili.
