Christmas is only one week away. Are you enjoying the preparations, and everything involved in it?

It is great to see people buying gift boxes, and ingredients to make cookies, candies, etc. A lot of folks will be blessed to receive gifts, but the ones giving will also be blessed. It is a joyous time of year. May we remember what God has done for us in giving us the gift of His Son and rejoice all year.

Today we have some snow in the air. The little white balls, which look almost like tapioca, bounce on the pavement. A good reminder of what we have coming this winter. Our warm, cozy houses certainly feel good.

On Wednesday evening the youth have plans to go Christmas caroling. That is always enjoyed by the singers and the listeners.

Date pudding is a favorite dessert for Christmas dinner. Here is a recipe taken from the cookbook, “Cooking in the Blessed Nest”.

Date Pudding
1 cup chopped dates
1 tsp baking soda
1 cup hot water
2 tbsp butter
½ cup brown sugar
½ cup white sugar
1 egg
½ cup chopped nuts
1 cup flour
1 tsp vanilla

Pour hot water and butter over dates and soda. Let it set for 30 minutes. Combine sugar, egg, nuts, and vanilla. Mix well. Add dates and flour. Pour into a greased 9×13 pan. Bake at 350° for 45 minutes. When cool, cut into small squares.

Butterscotch Pudding
2 cups brown sugar
4 tbsp butter
4 egg yolks
1 cup water
4 tbsp flour
4 cups milk

In a saucepan heat brown sugar, butter, and water to a boil and boil for 5 minutes. Mix flour, egg yolks, milk and add to water mixture, boil until thick. Layer date pudding squares, butterscotch pudding, and cool whip (or whipped cream) in a bowl. Add bananas in the layers if desired. A caramel pudding is also good instead of butterscotch or any pudding of your choice.

A P.S. note for the folks that enjoy birds. On Saturday morning while biking to work, coasting past a wood, a Junco flew up from the roadside and darted into the safety of the trees. 3 Bluebirds flew from the power lines across the road landing in the treetops. From deep within the wood, I heard the Chickadee’s whistle. At the next woodlot, the song of the Carolina Wren was loud and clear.
